Strawberry Handpies

Locally grown strawberries are featured in these easy to make handpies.

Equipment

  • 1 Baking sheet
  • 1 Cutting board
  • 1 Knife
  • 1 Cookie cutter or mason jar lid

Ingredients
  

  • 1 box Pie crust (should contain 2 sheets)
  • 1/2 lb strawberries sliced thin
  • 1/2 brick cream cheese
  • 1 tbsp vanilla extract
  • 2 cups powdered sugar

Instructions
 

  • Wash and dry your strawberries. Remove tops and thinly slice them.
  • Mix cream cheese, vanilla, and powdered sugar until you have a thick frosting.
  • Roll out pie crust and cut an even number of shapes.
    You can re-roll out leftover dough to continue cutting out shapes for hand pies.
  • On half of the pie crust cut outs, spread a dollop of frosting in the center. Don't pull it all the way to the edges so your pie crusts have somewhere to attach to.
  • Lay out strawberries on top of the frosting again trying to stay away from the edges.
  • Preheat oven according to the instructions on your pie crust box.
  • Take the other half of your cut-outs and place them over the strawberry halves. Seal the edges by pressing fork tines around the edge.
  • Place on a baking sheet and cook for 15 minutes. Check at that time and cook for an additional 3-5 if your pie crust is not flaky yet.
  • Once cooled, if you have additional frosting leftover you can top with frosting or eat them without.

Notes

Variation: skip the frosting and use pre-made jams in various flavors for a quick semi-homemade dessert.
