Wash and dry your strawberries. Remove tops and thinly slice them.
Mix cream cheese, vanilla, and powdered sugar until you have a thick frosting.
Roll out pie crust and cut an even number of shapes. You can re-roll out leftover dough to continue cutting out shapes for hand pies.
On half of the pie crust cut outs, spread a dollop of frosting in the center. Don't pull it all the way to the edges so your pie crusts have somewhere to attach to.
Lay out strawberries on top of the frosting again trying to stay away from the edges.
Preheat oven according to the instructions on your pie crust box.
Take the other half of your cut-outs and place them over the strawberry halves. Seal the edges by pressing fork tines around the edge.
Place on a baking sheet and cook for 15 minutes. Check at that time and cook for an additional 3-5 if your pie crust is not flaky yet.
Once cooled, if you have additional frosting leftover you can top with frosting or eat them without.
Notes
Variation: skip the frosting and use pre-made jams in various flavors for a quick semi-homemade dessert.
